INGREDIENTS:

– 250g digestive biscuits
– 100g melted butter
– 500g cream cheese
– 200g icing sugar
– 300ml double cream
– 2 ripe mangoes
– 2 tbsp gelatin powder
– 1/4 cup hot water
– Mango slices and mint leaves for garnish

PROCEDURE:

1. Prepare the Crust:
– Crush digestive biscuits until fine.
– Mix with melted butter until combined.
– Press mixture into the base of a springform pan.
– Chill in the fridge for at least 30 minutes.

2. Prepare the Filling:
– Peel and dice one mango, set aside.
– Blend the other mango into a smooth puree.
– Beat cream cheese and icing sugar until smooth.
– Whip double cream until soft peaks form.
– Dissolve gelatin powder in hot water, let it cool slightly.
– Fold mango puree and diced mango into the cream cheese mixture.
– Gently fold in the dissolved gelatin.

3. Assemble the Cheesecake:
– Pour the filling over the chilled crust.
– Smooth the top with a spatula.
– Refrigerate for at least 4 hours or overnight to set.

Garnishing or Visualizing:
– Before serving, decorate the cheesecake with mango slices and mint leaves.
