Coffee Cocoa Delight

INGREDIENTS:

  • 1 cup milk
  • 2 tsp vinegar
  • 1 tbsp coffee
  • 1 cup icing sugar
  • 1/2 cup oil
  • 1 cup all-purpose flour
  • 1/2 cup cocoa powder
  • 1 tsp baking soda

INGREDIENTS FOR MILK SOAK:

  • 1 cup milk
  • 6 tbsp fresh cream
  • 2 tbsp icing sugar
  • 1 tbsp coffee
  • 1 tbsp cocoa powder

INGREDIENTS FOR GANACHE:

  • 1 cup chopped chocolate
  • 1/2 cup fresh cream
  • 1/4 cup chopped peanuts (you can add almonds or walnuts also)

PROCEDURE:

  • Step 1: In a bowl, add warm milk, vinegar and coffee powder and mix well.
  • Step 2: Add sugar and oil until combined nicely
  • Step 3: Add the dry ingredients including, cocoa powder, baking powder, baking soda and all-purpose flour and whisk until well combined.
  • Step 4: Pour the batter into a cake tin and microwave until 7-10 minutes.

PROCEDURE FOR MILK SOAK:

  • Step 5: In a bowl add warm milk, cream, icing sugar, coffee and cocoa powder, whisk it until well combined.
  • Step 6: Once the cake is done poke holes into cake and pour the milk over the cake and let it soak completely.
  • Step 7: Refrigerate the cake for at least 15 minutes.

PROCEDURE FOR GANACHE:

  • Step 8: In a pan add cream and heat it on medium flame.
  • Step 9: Pour the hot cream on chopped chocolate and peanuts.
  • Step 10: Add the ganache on top of the cake and spread evenly.

VIOLA! YOUR CAKE IS READY!

NOTES AND TIPS:

  • Do not overmix the batter
  • Cook the cream at medium flame only
  • Make sure the milk is warm
  • Make sure to check the cake with toothpick test
