– 3/4 cup unsweetened cocoa powder
– 2 teaspoons baking powder
– 1 and 1/2 teaspoons baking soda
– 1 teaspoon salt
– 2 large eggs, room temperature
– 1 cup buttermilk, room temperature
– 1/2 cup vegetable oil
– 2 teaspoons vanilla extract
– 1 cup hot water

For the Coconut-Pecan Filling:

– 1 cup evaporated milk
– 1 cup granulated sugar
– 3 large egg yolks
– 1/2 cup unsalted butter
– 1 teaspoon vanilla extract
– 1 and 1/3 cups sweetened shredded coconut
– 1 cup chopped pecans

For the Chocolate Ganache:

– 1 cup heavy cream
– 8 ounces semisweet chocolate, chopped

Cooking Process:

Step 1: Baking the Chocolate Cake

  • 1. Preheat your oven to 350°F (175°C). Grease and flour three 9-inch round cake pans.
  • 2. In a large mixing bowl, sift together the flour, sugar, cocoa powder, baking powder, baking soda, and salt.
  • 3. Add the eggs, buttermilk, vegetable oil, and vanilla extract to the dry ingredients. Beat on medium speed for 2 minutes.
  • 4. Stir in the hot water until the batter is smooth. The batter will be thin.
  • 5. Divide the batter evenly among the prepared cake pans.
  • 6. Bake in the preheated oven for 25-30 minutes, or until a toothpick inserted into the center of the cakes comes out clean.
  • 7. Remove the cakes from the oven and let them cool in the pans for 10 minutes before transferring them to a wire rack to cool completely.

Step 2: Making the Coconut-Pecan Filling

  • 1. In a medium saucepan, combine the evaporated milk, sugar, egg yolks, and butter.
  • 2. Cook over medium heat, stirring constantly, until the mixture thickens, about 10-12 minutes.
  • 3. Remove from heat and stir in the vanilla extract, shredded coconut, and chopped pecans.
  • 4. Let the filling cool to room temperature before using.

Step 3: Preparing the Chocolate Ganache

  • 1. In a small saucepan, heat the heavy cream until it just begins to simmer.
  • 2. Place the chopped semisweet chocolate in a heatproof bowl.
  • 3. Pour the hot cream over the chocolate and let it sit for 1-2 minutes.
  • 4. Stir the mixture until the chocolate is melted and the ganache is smooth.

Step 4: Assembling the Cake

  • 1. Place one cake layer on a serving platter or cake stand.
  • 2. Spread half of the coconut-pecan filling evenly over the top of the cake layer.
  • 3. Place another cake layer on top and spread the remaining filling over it.
  • 4. Top with the third cake layer.
  • 5. Pour the chocolate ganache over the top of the cake, allowing it to drip down the sides.
  • 6. Use an offset spatula to smooth the ganache over the top and sides of the cake.

Optionally, garnish the top of the cake with additional chopped pecans or shredded coconut for added texture and visual appeal.

Notes and Helpful Tips:

1. Room temperature ingredients: Make sure your eggs and buttermilk are at room temperature before mixing the cake batter to ensure even mixing and a tender crumb.
2. Even layers: To ensure even cake layers, consider using cake strips or parchment paper strips around the edges of the cake pans to promote even baking and prevent doming.
3. Cooling time: Allow the cake layers to cool completely before assembling the cake to prevent the filling and ganache from melting.
4. Storage: Store the assembled German Chocolate Cake in the refrigerator for up to 3 days. Bring it to room temperature before serving for the best taste and texture.
5. Make ahead: The coconut-pecan filling and chocolate ganache can be made ahead of time and stored in the refrigerator until ready to use. Reheat the ganache gently before pouring over the cake.

With these simple steps and helpful tips, you’ll be able to create a show-stopping German Chocolate Cake that’s sure to impress any crowd!
