Ingredients:

For the Puff Pastry:

– 2 sheets store-bought puff pastry, thawed
– All-purpose flour, for dusting

For the Vegetable Filling:

– 2 tablespoons vegetable oil
– 1 small onion, finely chopped
– 2 cloves garlic, minced
– 1 cup mixed vegetables (such as carrots, peas, corn, and bell peppers), finely diced
– 1 teaspoon curry powder
– 1/2 teaspoon ground cumin
– 1/2 teaspoon ground coriander
– Salt and pepper to taste
– 2 tablespoons all-purpose flour
– 1/2 cup vegetable broth or water
– 1/4 cup milk
– 1/4 cup shredded cheese (optional)

For Garnishing:

– Sesame seeds or poppy seeds (optional)
– Fresh parsley or cilantro, chopped

Cooking Process:

Now that we have all the ingredients ready, let’s dive into the cooking process.

Step 1: Prepare the Vegetable Filling

  • 1. Heat vegetable oil in a large skillet over medium heat. Add the chopped onion and minced garlic, and sauté until translucent.
  • 2. Add the diced mixed vegetables to the skillet and cook until they are tender, about 5-7 minutes.
  • 3. Stir in the curry powder, ground cumin, ground coriander, salt, and pepper, and cook for an additional 2 minutes.
  • 4. Sprinkle the flour over the vegetable mixture and stir until well combined.
  • 5. Gradually pour in the vegetable broth or water, stirring constantly to avoid lumps. Cook until the mixture thickens.
  • 6. Stir in the milk and shredded cheese (if using), and cook for another 2-3 minutes until the cheese is melted and the filling is creamy. Remove from heat and let it cool slightly.

Step 2: Assemble the Vegetable Puffs

  • 1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
  • 2. On a lightly floured surface, roll out the thawed puff pastry sheets into rectangles of equal size.
  • 3. Cut each pastry sheet into squares or rectangles, depending on your preference.
  • 4. Place a spoonful of the vegetable filling in the center of each pastry square.
  • 5. Fold the pastry over the filling to form a triangle or rectangle, depending on the shape of your pastry. Use a fork to crimp the edges and seal the puff tightly.
  • 6. Place the assembled vegetable puffs on the prepared baking sheet, leaving some space between each puff.

Step 3: Bake the Vegetable Puffs

  • 1. Brush the tops of the vegetable puffs with beaten egg for a golden finish. Sprinkle with sesame seeds or poppy seeds if desired.
  • 2. Bake in the preheated oven for 20-25 minutes, or until the pastry is golden brown and flaky.
  • 3. Remove from the oven and let the vegetable puffs cool slightly on the baking sheet before serving.

Garnishing:

Let’s add some final touches to our vegetable puffs to make them even more enticing.

– Sprinkle chopped fresh parsley or cilantro over the baked vegetable puffs for a pop of color and freshness.
– Serve the vegetable puffs warm as a delicious appetizer or snack. They can also be enjoyed as a light meal with a side salad or soup.

Tips:

Before you get started, here are some tips to ensure your vegetable puffs turn out perfectly.

1. Customization: Feel free to customize the vegetable filling with your favorite vegetables and spices. You can also add cooked protein such as shredded chicken or tofu for added flavor and protein.
2. Ensure Proper Sealing: Make sure to seal the edges of the puff pastry tightly to prevent the filling from leaking out during baking.
3. Thawing Puff Pastry: Ensure that the puff pastry sheets are properly thawed before using them. Thaw them in the refrigerator overnight or follow the instructions on the package for quick thawing.
4. Even Baking: Place the vegetable puffs on the middle rack of the oven for even baking and browning.
5. Storage: Leftover vegetable puffs can be stored in an airtight container in the refrigerator for up to 3 days. Reheat them in the oven or toaster oven until warmed through before serving.

Remember to allow the vegetable filling to cool slightly before assembling the puffs.

Hot filling can make the puff pastry soggy and difficult to work with. By letting it cool for a few minutes, you’ll achieve the perfect balance of flaky pastry and flavorful filling in your vegetable puffs. Enjoy the process and savor the delicious results!
